- 1/2 tsp salt
- 2 tbsp vegetable oil or melted ghee
- 1/2 cup warm water (adjust as needed)
Instructions:
- Mix flour and salt in a bowl.
- Add vegetable oil/ghee and mix until crumbly.
- Gradually add water and knead to form a soft dough.
- Cover with a damp cloth and rest for 30 minutes.
- Roll out into thin circles, lightly toast on a dry pan (do not fully cook), cut into halves, and use for wrapping.
🍖 Tanzanian Beef Sambusa – The Most Famous Option
Ingredients:
- 500g minced beef
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ginger paste
- 1/2 tsp turmeric
- 1 green chili, finely chopped(optional)
- Salt and pepper to taste
- Fresh coriander (dhania), chopped
- 1 tbsp oil
Instructions:
- Heat oil in a pan. Add onions and cook until soft.
- Add garlic, ginger, and spices. Cook until fragrant.
- Add minced beef and stir-fry until browned and cooked through.
- Add green chili, salt, and pepper. Mix well.
- Finish with fresh coriander and allow to cool before filling.
🥕 Vegetable Sambusa (Green Beans, Corn, Carrots, Potatoes)
Ingredients:
- 1 medium potato, diced and boiled
- 1/2 cup green beans, chopped
- 1/2 cup sweet corn
- 1 medium carrot, finely chopped
- 1 small onion
- Salt and pepper
- 1 tbsp oil
Instructions:
- Sauté onions in oil until translucent.
- Add carrots and green beans, cook for 3–4 minutes.
- Add boiled potatoes and sweet corn, stir in curry powder.
- Season to taste. Mash lightly and allow to cool.
🌿 Fresh Garden Vegetable Sambusa (Greens, Carrot, Tomato)
Ingredients:
- 1 cup chopped local greens (e.g., spinach or mchicha)
- 1 carrot, grated
- 1 tomato, diced
- 1/2 small onion
- 1 garlic clove, minced
- Salt and pepper
- 1 tbsp oil
Instructions:
- Heat oil and sauté onions and garlic.
- Add grated carrot, cook for 2 minutes.
- Add tomatoes and greens, stir and cook until soft.
- Season to taste and cool before filling.
🧑🍳 Wrapping & Frying Your Sambusa
To wrap:
- Take one half-moon dough or sheet.
- Fold it into a cone, seal edge with flour-water paste.
- Fill 2 teaspoons of cooled filling inside.
- Seal top edge firmly.
To cook:
- Deep-fry in hot oil until golden brown.
- Drain on paper towels and serve hot with kachumbari (Tanzanian tomato-onion salad) or pili pili sauce.
